Chicken And Veggie Traybake

  1. Chop red onions, courgette, potatoes and peppers into large chunks and place onto a large, non-stick roasting tray along with a minced clove of garlic.  
  2. Drizzle three tablespoons of olive oil over vegetables, season with salt and pepper and roast for 15 minutes.
  3. Season chicken thighs with olive oil, salt and pepper or another marinade and add to the tray of roasted vegetables.
  4. Roast chicken and vegetables together for an additional 45 minutes, or until chicken is cooked through and then serve.
